Ragoût d’hiver végé / Vegetarian Winter Stew

Durant mon enfance, un des repas qu’on mangeait souvent en hiver était un ragoût au boeuf. Ce plat réconfortant contenait de gros morceaux de patates, de carottes et (évidemment) de boeuf.

Dans le but de recréer ce bonheur d’enfance en version végé, je me suis tourné vers Pinterest pour de l’inspiration. J’ai dû modifier un peu la recette, question d’assurer une source de protéine dans mon repas (c’est bien beau de remplacer le boeuf par les champignons, mais ils ne sont pas tout à fait égaux point de vue nutritionnel!).

Le résultat est un ragoût réconfortant mais faible en gras, riche en fibres (11 g/portion), et assez nourrissant pour être un repas complet (15 g de protéines par portion).


As a child, one of our staple winter meals was beef stew. It was filled with comforting potatoes, carrots, and (of course) beef.

In an attempt to recreate the same childhood feelings of happiness but with a vegetarian twist, I turned to Pinterest to help me find a recipe. I  had to modify the recipe a little so that there would be some protein in my meal (replacing beef with mushrooms is a nice idea but not nutritionally equivalent!).

The result is a stew that is comforting but also low in fat, high in fiber (11 g/ portion), and nutritious enough to be a full meal (15 g of protein/serving).

Ingrédients

2 oignons moyens, hachés / medium-sized onions, chopped

3 grosses carottes, coupées en gros morceaux / large carrots, chopped in big chunks

3 tiges de céleri, hachées / celery stalks, chopped

3 champignons portobello, coupés en gros morceaux / portobello mushrooms, chopped in big chunks

6 gousses d’ail, hachées / garlic cloves, chopped  

6 petites pommes de terre, coupées en gros morceaux / small potatoes, chopped in big chunks

1.25 L eau / water

60 ml pâte de tomate / tomato paste

15 ml paprika

15 ml herbes de Provence / Italian herb mix

5 ml sel / salt 

10 ml romarin frais, haché / fresh rosemary, chopped

250 ml levure alimentaire / nutritional yeast

300 ml haricots blancs bien rincés et égouttés / white beans, well rinsed and drained

500 ml petit pois / green peas

Instructions

1. Couvrir le fond d’une grande casserole et faire chauffer à feu vif. Quand l’eau bouille, ajouter oignons, carottes et céleri et faire revenir 7-8 minutes à feu moyen. / Cover the bottom of a big pot with water and heat on high. When the water boils, add the onions, carrots, and celery, and cook over medium heat for 7-8 minutes.

3. Ajouter les champignons et l’ail, puis faire revenir encore 5 minutes. / Add the mushrooms and garlic and cook another 5 minutes.

4. Ajouter les pommes de terre, la pâte de tomate, l’eau, le paprika, les herbes de Provence, le sel et le romarin. Amener à ébullition (à feu vif) et laisser mijoter 10 minutes (à feu doux)./ Add the potatoes, tomato paste, water, paprika, Italian herbs, salt and rosemary. Bring to a boil (on high heat) and then let simmer 10 minutes (on low-medium heat).

5. Réduire en purée 2 tasses du ragoût, la levure alimentaire et les haricots blancs (dans un mélangeur). Remettre dans la casserole, ajouter les petits pois et faire cuire 5 minutes de plus. Bon appétit! / Take 2 cups of the stew and blend with the nutritional yeast and white beans (in a blender). Add back to pot, add green peas and cook for an additional 5 minutes. Enjoy!
