Du seitan ! Cet aliment qui ressemble à un rôti végane est autant nutritif qu’il est délicieux, lorsque bien préparée. J’ai testé plusieurs recettes de seitan et il y avait toujours 2 problèmes : trop sec et trop d’emballages!! Cette recette règle ces 2 problèmes car la cuisson se fait dans la mijoteuse (nul besoin de prendre du papier aluminium pour la cuisson!)
Seitan à la mijoteuse (zéro déchets)
Le seitan est un substitut à la viande fort intéressant! Ce seitan est riche en protéines tout en étant tout tendre et goûteux!
Ingrédients
Pour le pain de seitan:
2 tasses de farine de gluten (500 ml) *ceci n’est pas de la farine tout-usage mais bel et bien la partie gluten du blé*
1/2 tasse de farine de pois chiches (125 ml)
1/4 de tasse de levure alimentaire (60 ml)
2 tasses d’eau tiède (500 ml)
2 c. à soupe de sauce soya (30 ml)
2 c. à soupe d’huile végétale (30 ml)
Pour le bouillon:
4 tasses de bouillon de légumes (1 L)
1 oignon, haché finement
6 gousses d’ail, haché finement
2 c. à thé d’herbes de Provence (10 ml)
Instructions
- Préparer le pain de seitan dans un bol: mélanger ensemble les ingrédients secs et y ajouter les liquides. Mélanger et pétrir quelques minutes (avec vos mains) avant de former 4 « pains ».
- Préparer le bouillon dans la mijoteuse: mélanger les ingrédients ensemble.
- Déposer les pain de seitan dans la mijoteuse et laisser cuire à basse température (Low) pendant 6 heures.
Ça devrait ressembler à ceci.
Se conserve au frigo durant 3-4 jours et au congélo, plusieurs mois.
Seitan! I love it!! But most of the recipes I have found ask you to cook it wrapped in aluminium foil. And, although I don’t have an inherent problem with this, I am moving towards a kitchen that creates less and less waste. So… I decided to start making my seitan in the slow cooker!
Slow Cooker Seitan (zero waste)
Seitan is a terrific substitute for meat! This recipe has all the nutritional benefits of other seitan recipes but is way more moist and delicious!!
Ingrédients
For the seitan loaves:
2 cups of gluten flour (500 ml) *this is not regular flour but rather found under the name of vital wheat gluten*
1/2 cup of chickpea flour (125 ml)
1/4 cup of nutritional yeast (60 ml)
2 cups of warm water (500 ml)
2 tablespoons of soy sauce (30 ml)
2 tablespoons of vegetable oil (30 ml)
For the broth:
4 cups of vegetable broth (1 L)
1 onion, finely chopped
6 bulbs of garlic, finely chopped
2 teaspoons of Herbes de Provence (10 ml)
Instructions
- Prepare the seitan in a bowl: mix the dry ingredients together and then add the wet ingredients. Mix well and then knead for a few minutes (with your hands). Lastly, divide into 4 and form into « loaves »
- Prepare the broth by placing all the ingredients in the slow cooker and stirring all together.
- Place the loaves in the slow cooker and cook on LOW for 6 hours.

Keeps well in the fridge for 3-4 days or a few months in the freezer.
