Chili végé au tofu et haricots / Tofu and Bean Vegetarian Chili

Chili végé au tofu et haricots pinto / Tofu and Pinto Beans Vegetarian Chili

Ingrédients

30 ml huile d’olive / olive oil

1 oignon, haché / onion, chopped

2 carottes, hachées / carrots, chopped  

2 branches de céleri, hachées / celery stalks, chopped

5 ml cumin moulu / ground cumin

7.5 ml chili en poudre / chili powder

5 ml sirop d’érable / maple syrup

5 ml sel / salt

2 gousses d’ail, hachées finement / 1 garlic cloves, finely chopped 

1 poivron, haché / sweet pepper, chopped 

1 bloc (454 g) tofu extra-ferme, coupé en cubes / extra-firm tofu, cubed

500 ml haricots pinto / pinto beans *

2 x 796 ml tomates en dés, en conserve/ canned diced tomatoes 

*en conserve, bien rincés ou précuits / canned, well rinsed or pre-cooked

Instructions

1. Dans une grande casserole, à feu moyen, faire revenir les oignons, les carottes et le céleri dans l’huile durant 5 à 10 minutes. / Over medium heat and in a big pot, sauté the onions, carotts and celery in the olive oil for 5 to 10 minutes. 

2. Ajouter le cumin, le poudre de chili, le sirop d’érable et le sel et bien brasser. Ajouter ensuite l’ail, le poivron et les cubes de tofu et laisser cuire 5 à 10 minutes encore. / Add the cumin, chili powder, maple syrup and salt and mix well. Add the garlic, sweet peppers and tofu and cook for another 5 to 10 minutes. 

3. Ajouter les haricots pinto et les tomates en dés et amener à ébullition (augmenter le feu à moyen-vif). Baisser le feu ensuite et laisser mijoter 20 à 25 minute. / Add the pinto beans and diced tomatoes and bring to a boil (over medium-high heat). Turn down the heat and let simmer for 20-25 minutes. 

Servir sur du riz ou du quinoa. Se congèle très bien. / Serve on rice or quinoa. Freezes well.
