Here is how to make beet purée:
- First off, preheat your oven to 400 degrees Farenheit.
- While the oven is heating up, wash a few beets (I usually do 4-5 large beets) and then place them in an oven-safe casserole dish (with a lid). Alternatively, you can wrap them in aluminum foil.
- Next, bake in the oven for approximately 1 hour (or until you can easily poke a fork in each beet).
- Last step: peel the beets and reduce to a purée in your blender or food processor.
Personally, I like to make big batches of beet purée so that I can freeze them in 1 cup (250 ml) jars and have them available for making pink food all year long!
